Beet Kavass

A lactoferment with heart healthy anthocyanins <3

An easy lactofermented beverage using beets!

Ingredients:

3-4 beets, roughly cubed

Basic Brine Formula:

6 cups water, filtered or boiled then cooled

2 Tablespoon salt (non-iodized)

Method:

  1. Prepare beets by lightly scrubbing and cutting off tops. (If you prefer to peel your beets you can, however you may lose some of the natural beneficial yeasts for the ferment)

  2. Cut beets into medium small pieces. Add to your fermenting vessel (large mason jar)

  3. In a glass measure cup prepare brine as follows in step 4

  4. Stir salt into cool or room temperature water. Once it has dissolved into a solution add to your large mason jar with the beets. Cover with a loose fitting lid and let sit for 2 weeks.
